Mediterranean Chicken with Roast Baby Potatoes and Steamed Vegetables

This meal was inspired by a recipe I had for a Mediterranean Chicken dish and appropriately tweaked to suit what I had in the fridge!! The Roast Baby Potatoes and steamed vegetables are great with it but you could also serve the dish with brown rice and green beans or mange tout – whatever you have available, but try to include a variety of colours, so that you have a range of vitamins and minerals on your plate.

Ingredients

  • Chicken Fillets x 3
  • Rice Flour or Cornflour
  • Black Pepper
  • Paprika
  • Onion x 1
  • Oregano (Dried) x 1 teaspoon
  • Clove of Garlic
  • Sweet Potato (Medium)
  • Green Pepper x 1
  • Aubergine x 1/2
  • 250ml Chicken Stock
  • Tin of Chopped Tomatoes
  • Tomato Puree x 1 dessertspoon
  • Pitted Black Olives x 12
  • Roasted Rosemary Baby Potatoes
  • Steamed Broccoli and Cauliflower

Method

  • Coat your chicken fillets with a little (rice or corn) flour, black pepper and paprika and brown with a little rapeseed oil.
  • Put aside once browned
  • Sauté an onion on a low heat in the same pan until softened
  • Sprinkle with a tsp of oregano
  • Add a mashed Clove of garlic and saute for a minute
  • Then add diced sweet potato, green pepper and aubergine
  • Soften over low heat for another couple of minutes while you are melting a stock cube in 250ml boiling water
  • Mix tsp of rice flour or corn flour to the stock and whisk it in well until completely blended to thicken sauce
  • Now add a tin of chopped tomatoes, a dsp of tomato purée and a tsp of paprika to the vegetables
  • Pour over the stock and mix well
  • Turn up heat and bring to the boil
  • Place the chicken fillets back into pan and cover with the lid
  • Simmer for 25 minutes
  • Pop in about 12 pitted black olives and continue simmering for another 5-10 mins

You can serve with rice or baby potatoes roasted with rosemary (which supports digestion) and steamed cauliflower and broccoli which are cruciferous vegetables and good for the gut, brain and liver amongst other things!
