Apple & Walnut Chocolate Chip Cookies

These Apple & Walnut Chocolate Chip Cookies are gluten and dairy free! This recipe was inspired by a youtube video I saw on and I just changed a couple of ingredients to suit what I had in the cupboard. Oh, and to add some dark chocolate chips as well!

Walnuts work really well with apples and not only add protein to the cookies but also omega 3, anti-oxidants and vitamins and minerals including Vitamin E, Vitamin B6 & B9, copper, manganese and phosphorus. So they have anti-inflammatory properties and are beneficial for your heart and your brain. They contain melatonin so if you must have a snack in the evening, they would be a good choice.

Apple & Walnut Cookies


  • Oats X 1 Cup
  • Apples X 2
  • Walnuts Chopped X 50g
  • Cinnamon X 1/4 tsp
  • Maple syrup X 1 Tablespoon
  • Water X 30ml
  • Cacao Nibs or Dark Chocolate Chips X 1/2 cup


  • Preheat your oven to 200°C
  • Whizz the oats in a food processor or nutribullit
  • Peel and chop 1 apple and put into a nutribullit or small processor, add 30ml of water and blend
  • Mix the oats, chopped walnuts, cinnamon, maple syrup and second apple (peeled & chopped) well
  • Fold in the apple puree and mix well
  • Spoon onto parchment paper and pop in the oven for 25 minutes
  • When baked, leave to cool on wire rack

These apple & walnut chocolate chip cookies are quick to make and filling thanks to the fibre and protein included in the oats and walnuts. They will keep for a couple of days in an airtight container (if they last that long!) Enjoy!
