Roast chicken is pure home comfort food and can be delicious simply seasoned with mixed herbs or cooked with lemons. However, this sauce is great when you want to add a little more flavour and goodness. Shallots are high in anti-oxidants and parsley has vitamin c, zinc, anti-oxidants and many other nutrients.
Ingredients for Sauce
• 4-6 Shallots
• Vegan Butter to sauté shallots
• 1-2 cloves Garlic (to taste)
• 1 cup of Oatmilk
• 1 Tablespoon of Chopped Parsley
• 1 teaspoon Dijon Mustard• Sea Salt & Black Pepper
• 1 teaspoon of Cornstarch
Method
✓ Gently sauté the finely chopped shallots in vegan butter with crushed garlic
✓ When soft, add the oat milk, parsley, mustard and seasoning
✓ Stir and simmer
✓ Add the cornstarch (which has been mixed with 1 tablespoon of water until smooth)
✓ Once the sauce thickens it is ready to serve with Roast Chicken, steamed vegetables and rosemary roasted baby potatoes
This sauce just elevates your Sunday roast and it is amazing how some chopped herbs increases the nutrient value of your food.
