Oats are a locally produced superfood and are among the healthiest grains on earth! They are naturally gluten free (once they are not processed alongside wheat) and are among the most nutrient dense foods you can eat. Including them in your diet benefits blood sugar levels, weight management and a reduced risk of heart disease. If you are not a fan of porridge, this recipe for oat bread may be just the thing to help you love this fantastic grain.
Ingredients
- 500g Oats
- 20g GF Flour
- 2tsp GF Baking Soda
- 500ml Dairy after Yoghurt (Koko)
- 2tbsp Oatmilk
- 1dsp Rapeseed Oil
- 1dsp Honey
- ½ tsp salt
Method
- Whizz oats in food processor to size of wheatmeal
- Mix dry ingredients together
- Mix wet ingredients and stir well
- Combine both and mix well
- Spoon mixture into a greased 2lb loaf tin and sprinkle with oats
- Place in pre-heated oven at 180 deg C for 55-60 minutes
- If not fully done, put back in for 5 mins at a time but 60 should do it (depending on your oven)
- Leave in tin on a wire rack for about 5 minutes
- Remove from tin carefully and cool bread on a rack
