Cauliflower, Leek and Cannellini Bean Soup

Cauliflower, leek, and cannellini bean soup brings these ingredients together to make a comforting and nutritious dish, offering a perfect balance of creamy texture and delicate flavors. Cauliflower is rich in fibre, vitamins and minerals, including vitamin C, vitamin K, folate and potassium. It also contains anti-oxidants to help fight disease and choline which supports brain health. The glucosinolates in cauliflower may have protective effects against certain cancers.

Leeks provide vitamin K, vitamin C, vitamin A, folate, and manganese, which are all essential for overall health. They contain heart healthy antioxidants and compounds like allicin, which may help lower blood pressure and improve cholesterol levels. Being high in fibre, they help to keep us regular! The polyphenols in leeks are important for our gut health and together with the sulfur compounds, leeks may help combat inflammation and lower the risk of chronic diseases. In addition to all of this they contain lutein and zeaxanthin, antioxidants that support vision and protect against age-related eye diseases.

Cannellini beans are a nutritious and versatile legume containing fibre, protein and vitamins & minerals. We need protein to support muscle growth, repair, and overall body function. Again, the fibre supports gut health and regular bowel movements. The soluble fibre element helps to lower bad cholesterol (LDL) and regulate blood pressure. Low glycemic index and fiber content help to prevent blood sugar spikes, making them great for blood sugar level management. Vitamins & minerals include iron, magnesium, folate, and potassium, which support energy production, brain function, and overall well-being. Cannellini beans also contain polyphenols for gut health and to prevent oxidative stress.

What way do you like your overnight oats?

Ingredients (4 servings)

  • White Onion x 1 Medium
  • Clove of Garlic x 1
  • Leek x 1
  • 400 grams Cannellini Beans (rinse well)
  • 700 grams Frozen Cauliflower
  • Garam Masala (1/2 tsp)
  • Pumpkin Seeds (2 tablespoons)
  • Sesame Seeds (1 tablespoon)
  • Dried Parsley (1 tablespoon)

Method

  • Peel and roughly chop the onion, sautee in 2 tbsp of olive oil over a low heat until soft
  • Chop the clove of garlic and add to the softened onions for 1 minute and stir
  • Add the garam masala to the pan and stir well
  • Add the frozen cauliflower, leeks and cannellini beans to the pan and then add 1 litre of stock
  • Bring to the boil and then lower heat to a simmer for 20 minutes
  • Allow to cool, add the dried parsley and then blend with a hand blender
  • Serve with parsley , pumpkin seeds and sesame seeds sprinkled on top. I also added a couple of coconut flakes (optional)

I made this soup with frozen cauliflower and it worked really well. You can freeze the finished soup in batches too for lunches or for quick suppers. All you need is hand blender, and homemade soup is so satisfying to make, and nourishing to eat! I hope that you enjoy this cauliflower, leek & cannellini bean soup!
