Homemade Granola

Homemade granola can be made using many different ingredients, and so you can vary them depending on what you have in your store cupboard. This recipe is just my preferred one, but feel free to substitute the ingredients with your favourites. Granola is a really crunchy and tasty way to add some protein to your breakfast, yoghurt pot snack or even a dessert. It is also very easy to make, with minimum prep and you can make a larger batch to store for a couple of weeks.

The ingredients in this granola contain protein (re-build, repair and filling) and fibre (supports healthy digestion), in addition to other minerals and vitamins like vitamin A, calcium, iron and magnesium. Each 20g serving contains approximately 3g of protein.

Granola

Ingredients for 12 portions of approx 20g

  • Oats x 100g
  • Pumpkin Seeds X 25g
  • Sunflower Seeds X 20g
  • Sesame Seeds X 25g
  • Walnuts X 30g
  • Dried Apricots X 40g
  • Coconut Flakes X 20g
  • Cinnamon X 1/2 teaspoon
  • Coconut oil X 2 tablespoons
  • Maple Syrup X 2 tablespoons
  • Honey X 1 teaspoon

Method

  • Pre-heat the oven to 150 Deg C
  • Add the oats, walnuts (chopped), cinnamon, pumpkin, sunflower and sesame seeds to a bowl and mix well
  • Melt the coconut oil and mix with the maple syrup and honey
  • Add to the dry ingredients and mix through so that everything is coated
  • Spread out on parchment paper on a baking a tray
  • Place in the oven for 15 minutes
  • Remove and add the coconut flakes and dried apricots (chopped)
  • Mix through gently on the tray and replace in the oven for another 10-15 minutes (check after 10)
  • Once cooked, leave to cool completely and then store in an airtight container in a cupboard (not the fridge)
  • It will last for several weeks if stored correctly as all of the ingredients have been dried.

Granola is so satisfyingly crunchy and will help you to stay feeling full thanks to the protein and healthy fat content. As always, portion sizes are key. Making it yourself, means that you control the ingredients and it won’t contain any processed sugar. Enjoy!
